To give that tailgate platter or an autumn stir-fry a twist, consider searing these sai ua sausages. Olympia Provisions in Portland, Ore., makes the Thai links in collaboration with Andy Ricker of the Pok Pok restaurants there and in New York. Along with fish sauce, lemongrass, garlic and shallots, these sausages are infused with galangal, chiles and lime leaf.
